White asparagus omelette


All ingredients can be substitued as needed.   For the photos below we used onions, red bell peppers, cheddar cheese, and bacon.

Original recipe:

- Chopped shallots

- Chopped colored sweet mini peppers

- Chopped Gourmet white asparagus tips

- Fresh Ground Pepper

- Chopped Black Forest Ham *optional

Use PAM or olive oil to coat pan, bring to medium to medium high heat

Put all the chopped ingredients into the pan and cook for 2-3 minutes, add fresh ground pepper, allow ingredients to stay a little crunchy

Pour beaten eggs, or Egg Starts - fat free, cholesterol free eggs

Cook like any omelet

When firm scatter lightly with Parmigianino Reggiano shaved cheese and fold over the omelet

Cook long enough for cheese to melt, do so at slightly lower heat level
